Whipped Feta with Roasted Grapes and Pistachios
This is the appetizer that gets people talking. Creamy whipped feta, sweet roasted grapes, crunchy pistachios, and a generous drizzle of olive oil. It comes together in under 30 minutes and it looks like you spent way longer on it than you did.
We picked this up from our Aunt Sofia, who makes it every time anyone comes over. It hasn't failed yet.

Ingredients
- 1 pound red or black seedless grapes
- 2 tablespoons olive oil, plus more for drizzling
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 8 ounces feta cheese, crumbled
- 2 tablespoons whole milk (or more to thin)
- 1/4 cup shelled pistachios, roughly chopped
- Crusty bread or pita chips for serving
Instructions
- Preheat oven to 400F.
- Toss grapes with 2 tablespoons olive oil, salt, and pepper.
- Spread on a baking sheet in a single layer. Roast 20 minutes until softened and starting to burst.
- While grapes roast, blend the feta and milk in a food processor until smooth and creamy. Add more milk if needed.
- Spread the whipped feta on a serving platter.
- Top with roasted grapes (and their juices), pistachios, and a good drizzle of olive oil.
- Serve with bread or pita chips.
Tips
- Don't crowd the baking sheet. The grapes need space to roast, not steam.
- Better feta makes better dip. The pre-crumbled stuff can be dry.
- Toasted pine nuts, fresh thyme, or a drizzle of honey all work as substitutions or additions.
Make Ahead
Both the roasted grapes and whipped feta can be made a day ahead and refrigerated separately. Let the feta come to room temperature before serving and warm the grapes slightly.
